BBQ Chicken Spud

1 med sweet potato 1 med chicken fillet 1/2 red onion Jalapeanos from jar 2 tbsps bbq sauce



Wrap sweet potato in tin foil with salt and pepper and pierce it with a fork then bake in oven for 45-60mins. Also add into the oven your chicken fillet and they can cook together. While these are cooking chop your your onion and jalapeano, cook them on a pan, then once the chicken is cooked shred it with a fork and add bbq sauce mix together with onion and jalapeano, slice potato open down the centre and stuff with chicken mix. enjoy.
