Feta Salad

1 large egg 40g baby leaf spinach 5cm cucumber ,halved length-ways and sliced 40g feta cheese,cut into small cubes or lightly crumbled 4 black olives,halved For the dressing: tsp extra virgin olive oil 1/2 tsp English mustard pinch of sugar 1 tsp mayonnaise Juice of half lemon Salt and pepper


Heat a small pan of water to boiling.Using a slotted spoon,slowly lower the egg into the boiling water.Heat for 8-10 minutes depending on how well-cooked you like your egg.Remove from water using the slotted spoon and cool in a bowl of cold water for a minute or two to stop the cooking process.


Meanwhile make the dressing by combining the olive oil, mustard, sugar, mayonnaise,lemon juice ans salt and pepper in a small bowl.Arrange the spinach and cucumber on a plate and pour the over half the dressing. Add the feta cheese and olives. Peel the just cooled egg and quarter. Arrange the egg pieces over the salad. Drizzle the rest of the dressing over. Serve immediately.
