Grilled Portobello Mushrooms
2 flat open portobello mushrooms 1tsp extra-virgin olive oil 1/2 garlic clove,peeled and crushed 1tsp chopped fresh parsley 1 medium tomato salt and freshly ground black pepper
Preheat the grill.Prepare the mushrooms by brushing off any oil and cutting out the stalks.Finely chop the stalks and mix with the olive oil,garlic and parsley in a small bowl. Cut the tomato in half,scoop out and discard all the seeds,finely chop the tomato flesh and add to the bowl.Place the mushrooms open side down on a grill pan and grill for 4 minutes.
Remove the mushrooms from the grill pan and turn them over.Evenly distribute the garlic and tomato mixture over the mushrooms,seasons with salt and pepper and grill for a further 6 minutes.Serve immediately.
