Hearty Soup

6 tomatoes 1 red pepper 1/2 cucumber 4 shallots Lemon juice Fresh parsley 1 tbsp olive oil


Chop you veg, set a small handful aside and put the rest in a blender. Add the lemon juice, parsley and oil then blend. if required add a little water to get the consistency you like, flavour with salt and pepper, garnish with remaining veg, you can make this ahead and heat in microwave.
