Mexican Chicken Soup

1 chicken fillet 1 carrot peeled and chopped 1 onion chopped 1 stick of celery chopped 1 400g tin of chopped tomatoes 1 pepper chopped 1 tsp lazy garlic 500ml water
1/2 tsp paprika, turmeric, ground cumin, chilli powder, black pepper & mixed herbs Cut the chicken fillet into small cubes, place it into a large saucepan with carrot, onion and celery, pour water in and bring up to simmer, cook for 25mins then add chopped tomatoes, pepper and garlic and bring back to simmering point. Add all the spices and herbs then simmer for a further 30mins,then serve!
