Special Omelette

2 egg whites + 1 whole egg 3 slices of lean ham 2 slices of lean cooked roast beef 12 mushrooms 1 tomato sliced 30g light cheese Fry light

Chop mushrooms into slices and add to non stick pan on medium heat with a few sprays of fry light, cook until brown, crack eggs into bowl take out 2 yolks, whisk with a fork, then add to the pan, dice tomato and chop up ham and roast beef into cubes preferably then add to the pan also, cook until golden underneath then fold and serve with cheese sprinkled over the top.
