Veggie Mexican Beans and Cheese
1x400g can kidney beans, rinsed and drained 1tsp chilli powder 1/2tsp ground cumin 1tsp dried oregano 2 handfuls of iceberg or little gem lettuce 2 medium tomatoes, chopped 40g light grated cheese

Tip the drained beans into a shallow bowl and roughly mash with back of a fork. Sprinkle over the chilli power,cumin,oregano, then mix together until thoroughly combined. Arrange the lettuce leaves on a plate and top with the beans., add the tomatoes and then the grated cheese over the top.
